Hi and welcome back to my kitchen. For me one of the most important things when it comes to making cakes is making sure you have a well covered cake as a base to add your design. Now I usually refer to it as icing, but icing is exactly the same as fondant or sugarpaste, and in this video tutorial I show you how to prepare your cake, and cover it to get smooth sides and that sharp edge along the top.

How to Prepare Cake Pans with Lorelie

How to prepare cake pans so that they will not stick. This is extra work, but It is worth doing because it will guarantee that your cakes will not stick. Transcript below:

1. Use wax paper or parchment paper and mark a line around your cake pans. If you have more than one cake pan then layer the pieces of paper and cut them all at once.

2. You can buy these pre-cut if you have a lot of cakes to bake and don’t want to take the time to cut them individually.

3.They do not have to be cut perfectly, just as long as they cover most of the bottom of the cake pan. It does have to small enough so that the pan liner does not go up the sides.

4. Use solid shortening and a paper towel or a spray oil to coat the bottom of your cake pans. spread the oil around getting into all of the corners and completely covering the bottom and sides of the pan.

5. Put some all-purpose or cake flour in the cake pan and tap the pan to coat it. Tap the excess into the next pan and repeat until all of your pans are coated.

6. The next step is to place the wax or parchment paper into your oiled and floured pan.

This will guarantee that your cakes will not stick.
